Lemony Lemon Brownies

I don’t know why these are called brownies, but they’re always a hit at my parties. If you like lemons you’ll love this lovely lemony goodness! This recipe works in the Sunflower mold… and you can always double it for double the yum!

Ingredients-

Lemon Brownies

1/2 cup unsalted* softened butter

3/4c flour

3/4c sugar

1/4t salt

2 eggs, large

2T lemon juice

2T lemon zest

*If using salted butter omit the 1/4t salt

Lemon glaze-3T lemon juice, 1 c powdered sugar, lemon zest.


Preheat the oven to 350 degrees. Set Sunflower mold on perforated baking sheet.

Zest and juice lemon and set aside.

Beat the flour, sugar, salt and butter until combined.

In a separate bowl, whisk together eggs, lemon zest, and lemon juice until combined.

Combine with flour mixture and beat for two minutes at medium speed until smooth and creamy.

Pour into mold and bake for 20 minutes. As always, no greasing Flexipans and no sticking!

Allow to cool completely before glazing.

To make glaze- Whisk the powdered sugar, lemon zest and juice. Add more lemon juice as desired to reach consistency you’d like. Drizzle over the brownies and let glaze set.
